Recipe Of Winter Salad With Brown Butter Balsamic Dressing

  • Mixed winter greens (like kale, spinach, arugula)
  • 1 cup of roasted butternut squash, cubed
  • 1/2 cup of dried cranberries
  • 1/2 cup of chopped walnuts or pecans
  • 1/2 cup of feta cheese, crumbled
  • 1 apple, thinly sliced

Brown Butter Balsamic Dressing:

  • 3 tablespoons butter
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

  1. Prepare the Salad:
    • In a large bowl, combine the mixed greens, roasted butternut squash, dried cranberries, nuts, feta cheese, and apple slices.
  2. Make the Dressing:
    • In a small saucepan, melt the butter over medium heat. Continue to cook, swirling occasionally, until the butter turns a golden brown color and has a nutty aroma. This should take about 3-5 minutes. Be careful not to burn the butter.
    • Remove from heat and let it cool slightly. Then, whisk in the balsamic vinegar, honey, and Dijon mustard until well combined. Season with salt and pepper to taste.
  3. Combine and Serve:
    • Drizzle the brown butter balsamic dressing over the salad and gently toss to combine.
    • Serve immediately, or refrigerate the dressing separately and dress the salad just before serving to keep the greens crisp.

Enjoy your Winter Salad with its rich, nutty, and slightly sweet Brown Butter Balsamic Dressing!
