Ingredients:

Salad:

  • Mixed winter greens (like kale, spinach, arugula)
  • 1 cup of roasted butternut squash, cubed
  • 1/2 cup of dried cranberries
  • 1/2 cup of chopped walnuts or pecans
  • 1/2 cup of feta cheese, crumbled
  • 1 apple, thinly sliced

Brown Butter Balsamic Dressing:

  • 3 tablespoons butter
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Salad:
    • In a large bowl, combine the mixed greens, roasted butternut squash, dried cranberries, nuts, feta cheese, and apple slices.
  2. Make the Dressing:
